KETOGENIC CHOCOLATE COOKIES RECIPE

Don't they look yummy? And it's not a stock picture! I just finished baking these babies as we speak, and thought I could share the recipe with you all.
I keep telling my community: good skincare products are important, but account for only 10% of skin health. The remaining 90% is nutrition, stress management and healthy lifestyle!
Lifestyle versus diet
Keto to me is a lifestyle, not another fad diet.
No diet work in the long run. Why? Because no human being can live forever in a state of frustration. No humans, regardless of age, sex or race want to be told they can never again have pizza, pasta, fried rice, pastries or tacos. I'm no exception.
The secret lies in healthy substitution. Replacing unhealthy ingredients by healthier versions, and pimping favorite comfort foods into their low carbs, high-quality fat version.
What is Keto?
In a nutshell, the ketogenic way of eating is high fat, moderate protein and very low carbs. The macros look like this:
75% of daily calories in the form of healthy fats (olive oil, walnut oil, avocado oil; coconut oil, full fat cream & butter...)
20% protein (quality matters: wild-caught fishes, free-range/hormone-free meats...)
5% carbohydrates (mostly from vegetables).
Very simply put, the purpose of keto is to:
Maintain a low, stable insulin level in the body (which helps reduce inflammation and prevent most diseases)
Put the body in fat burn instead of sugar burn (the body uses ketones from fat as fuel, instead of glucose/sugar.)

Enough blah-blah, give me the recipe!
For approximately 12 cookies:
180g almond flour or almond powder
100g full-fat salted butter
70g erythritol (healthy sugar substitute)
1 large egg
1 teaspoon of vanilla extract
1/2 teaspoon of baking soda
1/2 teaspoon of himalayan salt (or sea salt)
50g of 85% dark chocolate chips
Put the butter in a bowl and melt is slightly (not fully) 30 seconds in the microwave. The texture should be creamy, not liquid. Then put all ingredients together in a food processor with a dough hook.
Make small dough balls and weigh them to be 40-42g each.
Put them on a tray with baking paper, leave space between each of them as they will spread.
No need to squash them: they will spread by themselves in the oven.
Pre-heat the oven to 180 degrees celsius and bake for 14mn.
They will look floppy: remove them anyways from the oven...they will further solidify out of the oven! Wait for an hour or so, and enjoy!!!

I like to make a Christmas version of them using the same ratios, adding fresh gratted ginger and cinnamon. Other awesome variations: olive oil & mandarin zest, crushed macadamia nuts, bounty (coconut shred and 85% chocolate chips)...
If you want a fruity version of it, make sure to use fresh fruit, or frozen fresh fruits that are keto-friendly, such as raspberries, cranberries, blueberries or strawberries. Do not use dried fruits, which are often loaded with sugar / syrups.
